Ingredients
Non-stick cooking spray
CRUST:
2 cups Martha White All-Purpose Flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup butter, melted and cooled
FILLING:
2 (8 oz.) packages cream cheese, softened
1 cup sugar
4 large eggs
1 teaspoon grated lemon peel
3 tablespoons fresh lemon juice
GARNISH:
Lemon slices
Fresh or frozen, thawed fruit
Mint sprigs
Instructions
Heat oven to 350°F. Spray a 13 x 9-inch pan with no-stick cooking spray.
Combine crust ingredients in a medium bowl.
Beat with an electric mixer until the mixture resembles coarse crumbs. Press the mixture into the bottom of the prepared pan. Bake for 20 minutes or until light golden brown.
Combine cream cheese and sugar in a medium bowl. Beat with an electric mixer until blended. Beat in eggs, lemon peel, and juice on low speed of the mixer just until smooth. Remove partially baked crust from the oven. Pour filling over the crust.
Bake an additional 20 to 30 minutes or until the filling is set.
Cool. Cut into bars. Garnish with lemon slices, fruit, and/or mint, if desired.
