Ingredients
Non-stick cooking spray
Crust:
2 cups Martha White All-Purpose Flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup butter, melted
1/2 cup finely chopped macadamia nuts
Filling:
2 cups sugar
2 tablespoons Martha White All-Purpose Flour
1 tablespoon grated lime peel (if desired)
6 tablespoons fresh key lime or lime juice
6 large eggs, beaten
Toppings:
Powdered sugar
Grated lime peel (if desired)
Instructions
For the crust: Heat oven to 350º F. Spray a 13x9-inch baking pan with no-stick cooking spray. Combine flour, sugar, salt, and butter in a medium bowl. Beat on low speed of an electric mixer until the mixture resembles coarse crumbs. Stir in macadamia nuts. Press the mixture into the bottom of the prepared pan. Bake for 15 to 20 minutes or until light golden brown.
For the filling: Combine all filling ingredients in a separate medium bowl. Beat until smooth.
Remove partially baked crust from the oven. Pour the filling over the crust. Return to the oven; bake an additional 20 to 25 minutes or until the filling is set. Cool for 30 minutes or until completely cooled. Sprinkle with powdered sugar and grated lime peel, if desired. Cut into squares.
