Ingredients
1 package Martha White Blueberry Flavored Muffin Mix
1/2 cup butter, melted
3 large eggs, beaten
1 cup sugar
3 tablespoons fresh lemon juice
1 tablespoon cornstarch
1 1/2 teaspoons grated lemon peel
powdered sugar
Instructions
Heat oven to 350°F. Coat an 8-inch square baking pan with no-stick cooking spray. Combine muffin mix and butter in a medium bowl with a fork until evenly moistened. Press the mixture into the bottom of the prepared pan to form a crust. Bake for 15 minutes or until light golden brown.
Whisk eggs in a medium bowl. Blend in sugar, lemon juice, cornstarch, and lemon peel until blended.
Remove partially baked crust from the oven. Pour the filling over the crust, tilting the pan to coat evenly. Return to the oven; bake an additional 15 to 20 minutes or until the filling is set. Cool completely on a wire rack.
Sprinkle with powdered sugar. Cut into squares and serve.
