Brownies are a crowd-pleasing summertime classic for a reason—but sometimes even classics need a little dressing up. Here are three fun ways to transform a batch of brownies into summertime treats that are anything but basic.
Basic Brownies
2 packages Martha White Brownie Bites mix
2 large eggs
¼ cup plus 2 tablespoons vegetable oil
Heat oven to 350°F. Spray an 8×8″ baking pan with nonstick baking spray. In a medium bowl, stir together Martha White Brownie Bites mix, eggs, and oil, mixing until just combined. Spread batter into prepared pan. Bake until set and shiny on top, about 25 to 30 minutes. Let cool at least 20 minutes before slicing.
Brownie Banana Split
Prepare the recipe for basic brownies for Basic Brownies. Let cool completely, then cut into long, 1 ½”-wide slices. For each sundae, place one slice in a shallow bowl. Slice a ripe banana in half and place one half on each side of the brownie slice. Top with a scoop of vanilla ice cream and a scoop of strawberry ice cream. Drizzle with hot fudge and garnish with whipped cream and chopped peanuts. Top with a maraschino cherry.
Chocolate Raspberry Parfait
Prepare the recipe for basic brownies for Basic Brownies. Let cool completely, then cut into small, 1” squares. To make each parfait, place 2 to 3 squares in the bottom of a small glass. Top with a layer of fresh raspberries and a layer of whipped cream. Repeat. Serve with a spoon.
Brownie S’mores
Prepare the recipe for basic brownies for Basic Brownies. Let cool completely, then cut into 2” squares. To make S’mores, toast large marshmallows until caramelized and gooey, then sandwich between a slice of brownie and a graham cracker.
