Ingredients
1/2 pound bulk pork sausage
1/3 cup pure vegetable oil
1 cup Martha White Self-Rising Enriched White Corn Meal Mix
1 cup Martha White Self-Rising Flour
1/2 teaspoon dried sage
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cayenne pepper
1 1/2 cups shredded sharp cheddar cheese, divided
1 cup dried apples, very finely chopped
1 egg, beaten
1 1/4 cups milk
1/4 cup water
Instructions
Heat oven to 375°F. Cook sausage in a 10-1/4 inch cast iron skillet over medium heat, crumbling as you cook, until lightly browned. Remove the sausage with a slotted spoon. Pour drippings into measuring cup; add enough oil to make 1/4 cup. Pour drippings and oil back into the skillet. Place skillet in oven to heat, about 8 minutes.
Combine corn meal mix, flour, sage, nutmeg, and cayenne pepper in a large bowl; stir to blend. Add 1 cup cheese, apples, and sausage; toss to coat.
Add egg, milk, and water to dry ingredients; stir until blended. Remove skillet from oven; pour hot drippings and oil into batter; stir until blended. Pour batter into hot skillet. Sprinkle with remaining 1/2 cup cheese.
Bake 25 to 30 minutes or until golden and the toothpick inserted in the center comes out clean. Cool 5 minutes. Serve hot.
