4 slices bacon
1 large onion
2 cups Martha White® Self-Rising Corn Meal Mix
1-1/2 cups shredded Swiss cheese
1-1/3 cups milk
2 eggs, beaten
1. Heat oven to 425 degrees F. Grease 13x9-inch pan. In large skillet, cook bacon over medium heat until crisp. Remove bacon from skillet; drain on paper towels. Crumble. Reserve 1/4 cup drippings in skillet. Add onion to drippings; cook until tender, stirring occasionally.
2. In large bowl, combine corn meal mix, cheese, milk and eggs; stir until smooth. Stir in crumbled bacon and onion. Pour into greased pan.
3. Bake at 425 degrees F. for 25 to 30 minutes or until golden brown.
